bitetravel Enjoy Spectacular Views of Rome FromRhinoceros Le Restau & RoofBar Images courtesy of ASA Luxury M anfredi Fine Hotels Collection, owned by Counts Goffredo and Leonardo Ce- glia Manfredi, have opened Rhinoceros Le Restau & RoofBar, a gastronomic and mixology space, offering spectacular views over Rome from the rooftop of The Rhinoceros Foundation, Alda Fendi’s art palace dating back to the 17th century. The Foundation was inaugurated in 2018 follow- ing a restoration by architect Jean Nouvel, while Manfredi Fine Hotels recently took over the man- agement of the restaurant and bar. Rhinoceros Le Restau & RoofBar celebrates Ital- ian cuisine and Roman tradition, combining rich typical flavours with contemporary techniques through a menu devised by resident chef Alessan- dro Marata under the supervision of Giuseppe Di Iorio, Executive Chef at the 1-star Michelin Aro- ma. The Lounge bar on the terrace is dedicated to mixology, where bar manager Christian Compar- one creates drinks with great aesthetics, telling a story and evoking memories and emotions. The cocktail menu travels between classics and twists, housed in unconventional glasses such as repurposed candle holders, a deceiving appear- ance juxtaposed with flavours. The signature menu comprises eight drinks divided into three catego- ries, inspired by the same number of living rhi- noceroses species. Two drinks are dedicated to In- donesian rhinos, African rhinos inspire four, and a two-drink path is dedicated to southern Indian rhinos called ‘Crash of Five’. The interior design was overseen by Giorgia Den- nerlein of Loto Ad Project, who imagined a new identity for the main terrace and roof terrace while gracefully blending the minimalism of the layout, aimed at diluting the structure’s rigour. The rhi- noceros that gives the place its name remains the thread running through the entire concept with dominant red, a reminder of the Foundation’s dis- tinctive feature and the original shapes for the fur- nishing accessories, between circular lines and soft curves in optical art style.
