The Bite Magazine - Autumn/Winter 2019 - Issue 26
bite cuisine The menu is made up of first and second starters, mains, and desserts with bread and sides to complete the experience. We were like king and queen being treated to an array of dishes without having to make one decision on what to choose. For starters, we had Smoked Eggplant Bharta Cornet with herb feta; Potato Sphere Chaat with white pea mash; Soy Keema with quail egg, and lime leaf butter pao; Tandoori Scottish Salmon with lemon and black garlic cream; and Lamb Chops with cumin new potatoes. Every dish was so enriched with flavours that it made you ap- preciated the art that goes into preparing them. The Smoked Eggplant Bharta Cornet presented in cones with eggplant, pota- toes, and spices, and finished with feta cheese was different and intriguing; while the Potato Sphere Chaat consisting of crispy potato and white pea mash, with mince, coriander, and turmer- ic chutney and garnished with watermelon and beansprout was slightly spicy but delicious and full of flavour. Soy Keema with a mixed vegetable mash of soya beans, cauli- flower and carrots, and quail egg and buttered bread was also slightly spicy but I really loved the rich combination of flavours. I especially loved the Tandoori Scottish Salmon served on a ba- nana leaf, marinated in turmeric and black garlic cream, and garnished with a slice of radish and fish roe. The piquancy was totally out of this world. The Lamb Chops also created an ex- plosion of flavours in my mouth and I really enjoyed this dish as well. For our main dishes, we had Chicken Malai Tikka in a creamy green chilli sauce, with spring asparagus and truffles; Ghee Roast Lamb with shishito peppers, a selection of chutneys, a slice of avocado and roomali roti pancakes, a dish that is like the Chinese Aromatic Duck with pancakes; and Butter Chicken Kulcha, buttered chicken sandwiched between mildly leavened flatbread called kulcha. Our side dishes consisted of Black Dairy Dal, Tadka Sesame Vegetables and Steamed Basmati. We were delighted with the choice of desserts given to us: Makhan Malai, a mousse-like dish with saffron milk, rose petal jaggery brittle, and almonds, and Aamras, a mango and carda- mom cheesecake with a chocolate slate biscuit for decoration and a garnish of mangoes and summer berries in the sauce. The Makhan Malai was interesting as it had edible gold flakes im- bedded into the mousse that flittered up and down as if there was a slight breeze. Out of the two, I preferred Aamras which was very delicious.
