bitecuisine with blue corn tostadas. The sauces complemented the sashimi well, and the plantain chips were light and slightly crispy. There was a kick in the Tuna Tartare, which tasted amazing with the blended ingredients. We then tried Welsh Lamb Loin with piquillo pepper, pine nuts, smoked ricotta sauce, aji amarillo (yellow chilli pepper), lemon and cavelo nero (kale). Roasted Cornish Seabass with roasted pineapple and chipotle butter, served with grilled avo- cado and coriander rice. The lamb loin was deliciously cooked and seasoned, while the seabass was soft and tasteful, accom- panied by grilled aubergine with sesame and soy, and crushed Morghew Estate potato with parmesan and bottarga. Before dessert, we decided to have one more cocktail, Amber, with Remy Martin 1738 Cognac infused corn, caramel orange and cardamom syrup. I found it extremely strong, like a ne- groni and one I did not particularly enjoy. Other interesting cocktails include Samara with rum-infused cinnamon and ap- ple, Citrine with Bombay Sapphire gin and Yagul with Ojo de Dios Mezcal Café. Iris has vodka-infused blueberry, butternut squash, Herakut with Patron Reposado-infused chamomile, and an Aura mocktail. The White Chocolate Alfajore dessert with almond, guava and dulce de leche (caramelised milk) was crunchy and had mini- mal sweetness. Chestnut & Clementine Goat Cheese Cake was uniquely delicious with a rich flavour, and Island Chocolate Royal with coffee and mezcal ice cream was chocolatey with a fantastic coffee taste. If you're not into sweet things, you can choose cheeses from Fromagerie Beillevaire with candied pe- can and quince. Accessible via its entrance or through the Mandrake Hotel, Yopo restaurant is open for breakfast Monday to Sunday from 8 am to 11 am. It is closed for lunch and dinner on Monday and Tuesday. Lunch is available Wednesday to Saturday from 12 pm to 3 pm and dinner from 6 pm to 11 pm. Brunch on Sunday with live DJ music is from 12 pm to 6 pm.
