bitecuisine These dishes were accompanied by Lucknowi Aromatic Kofta Lamb Biryani, a bread basket containing plain, missi roti and tandoori roti, and sweet potato fries. Missi roti is traditional- ly made with whole wheat flour, gram flour and spices, whilst Colonel Saab’s version contains chickpea flour. The kofta lamb biryani was filling but tasty with succulent lamb pieces, and the bread basket provided a varied individual taste. The soft and slightly crunchy sweet potato fries were nicely seasoned. For the desserts, we indulged in Colonel Saab’s Bread and But- ter Pudding with raisins and almonds, which had me reminisc- ing about the pudding in my childhood memories. The Dark Chocolate Silk Cake with Thandai crumble was decorated with candy floss, fresh berries and vanilla bean ice cream. Both were exquisite in taste and texture, the grand finale of a meal fit for a banquet. Thandai is an Indian cold drink prepared with fennel seeds, watermelon kernels, rose petals, pepper and other ingre- dients. Our evening was complete when we met head chef Sohan Bhandari, the man behind the delicious dishes at Colonel Saab, who has over 20 years of experience. Bhandari started his cu- linary journey in India, where he worked in the industry for ten years. He moved to Dubai and stayed there for another ten years, opening around 10-15 new restaurants for a chain. He moved back to India and then came to the UK because of the opening of Colonel Saab in 2019. We thoroughly enjoyed the information we received from Roop and Atul. It’s admirable when a person’s legacy is appreciated and celebrated by his children or peers. Thus, we salute Roop for bringing Colonel Saab to the culinary arms of the UK. Colonel Saab is open Monday to Saturday from 12 pm to 3 pm for bar and lunch, then from 6 pm to 10.30 pm for dinner, and closed on Sundays.
