Don Cenobio Sauza, known as the ‘Father of Tequila’ identified blue agave as the best ingredient for producing tequila and founded the Sauza Tequila distillery, La Perseberancia. It was in 1936 that Margarita was invented thanks to the Americans. When they couldn’t get their hands on second-rate whiskey and bathtub gin, they took advan- tage of Mexico’s sweet agave nectar and Tijuana’s hundreds of bars. Once it was legal to drink in the US again, the Mexicans didn’t see much of the Americans. However, a newspaperman called James Graham and his wife took a trip to Tijuana and ended up in one of the surviving bars run by an Irishman called Madden who was known for his Tequila Daisy (Mar- garita means ‘daisy’ in English). Although Madden said his creation was a lucky mistake, it became one of the most celebrated in the US. In 1974, the Mexican government declared the term ‘tequila’ as its intellectual property.
