bitetechnology S everal years ago, wine technology company Coravin de- vised a way where wine connoisseurs could pour a sin- gle glass of their favourite wine without having to pull the cork. The Wine Preservation System cleverly opened the bottle whilst leaving the cork in place and thus protected the wine from oxidation, allowing it to evolve naturally. This en- abled wine enthusiasts to enjoy their glass on multiple occa- sions, over weeks, months or even longer, without wasting a single drop. Coravin is the brainchild of Greg Lambrecht who combined his knowledge of medical-grade needles with his passion for wine to develop the unique wine preservation system. One of the accessories, the non-coring Coravin Needle gently passes through corks without displacing the cork material. Once the Needle is removed, the cork returns to its normal shape. As wine is extracted through the Needle, it is replaced with pure Argon gas, ensuring oxygen never touches the re- maining wine to keep it as fresh as the day it was bottled. You can also use Coravin silicone Screw Caps to replace the original screw cap closure and extend the life of wines for up to three months. Several preservation systems including the Coravin Pivot combine the stopper and device to preserve the remaining wine bottle for up to four weeks. To use the Pivot, open the bottle of wine and replace the cork or screw cap with a Pivot Stopper with the cap open. To pour the wine, insert the Pivot Device through the Stopper, tilt the bottle so the spout is over the wine glass and then press and hold the button on the De- vice. Release the button and bring the bottle upright to stop it from pouring.
