bitedessert D oughlicious I n the 7th century AD, cookie dough, which essen- tially derived from the creation of cookies, were used by Persia (known as Iran) as test cakes. They would bake a slight cake batter in the oven to test the temperature, and it would come out looking like a mini cake. As one of the first countries to start using sugar shortly after it was discovered, Persia became known for its luxurious cakes and pastries. Eventual- ly, the cookie evolved into biscuits as they were easier to keep fresh and simple to carry on travels. Between the 17th and 18th century, cookies were offi- cially established when baking became more popular in Europe. In 1938, the world-famous chocolate chip cookie was created by Ruth Graves Wakefield and Sue Brides, who owned the Toll House Inn in Whitman, Massachusetts, USA. Soon, people started baking cookies in their homes. They also realised that the pre-baked cookie, known as the cookie dough, tasted great on its own, but it began to cause health problems due to the raw ingredients. Today, cookie dough is baked in the oven to a certain gooey consistency that is safer to eat; some of which are provided by Doughlicious, a gourmet cookie dough brand that creates flavoured cookies baked in the oven. After moving to London from the United States with her husband and three children over a dec- ade ago, Kathryn Bricken became famous amongst her friends for baking the best American-style cook- ies using the finest natural ingredients and so decided to start the brand in 2014. Kathryn has always been passionate about creating fabulous food. Before establishing her brand, she worked in product development in the United States and Canada. “When I came to England, my friends would ask me to make them a really good chocolate chip cookie,” she told business website Sundried . “My recipe not only tasted utterly delicious, [but] it was also a healthier version of the classic.” She later real- ised there was a gap in the market for making gooey American-style cookie dough that could be baked in minutes.
