Ideal to have on a sunny day or while the sun is setting, Smoked Tequila Sunset is made with a can of Berczy Lemon & Lime, 25 ml Tequila, one tea- spoon each of chopped pistachios and smoked sea salt flakes, 1/2 teaspoon of Demerara sugar and ice to serve. Mix the chopped pistachios, smoked sea salt flakes and Demerara sugar. Brush the rim of a low ball glass with a bit of syrup and then coat it with the mixture. Finally, fill the glass with ice, pour in 25 ml Tequila and top up with Berczy Lemon & Lime. Another exciting cocktail to make is Mulled Raspberry Punch. It requires quite a few ingredients, so be prepared to be amazed when you mix a can of Berczy Peach & Raspberry with 25 ml of Vodka or Gin, 225 g caster sugar, 75 g light brown sugar, one star anise, 1/2 teaspoon of black peppercorns, 1/2 vanilla pod (or 1/2 tablespoon of vanilla paste), two black cardamom pods, 1/4 teaspoon of tea leaves (jasmine, green or a light black tea like Assam) and one bay leaf. Firstly, dissolve the caster and light brown sugar in a pan with 150 ml of water, and add the star anise, black peppercorns, vanilla, black cardamom pods (roughly broken open), tea leaves and bay leaf. Let it simmer very gently to infuse the flavours for around five minutes; then leave it in a jar (with all the spices) to infuse further and cool down. Ideally, it would be best if you made this the night before, but it's also ok to drink once cooled down with enough syrup for six cocktails. When it is ready, muddle 25 ml of the syrup with 25 ml of Vodka or Gin (optional) and a handful of raspberries. Fill a highball glass with ice in two batches and add a layer of the raspberry mixture each time. Finally, top up with Berczy Peach & Raspberry and garnish with extra spices, raspberries and some bay or mint leaves.
