bite chocolate For the Love of Chocolate been working non-stop ever since at her commer- cial kitchen facility at Entrepreneur Space located in Long Island City, New York. Here, she and her small staff of fellow confectioners, as well as her father whom everyone lovingly refers to as ‘Pa’, work typically eight-hour shifts, during which they can produce 800 truffles and 1,200 chocolate bars! And while this is impressive, let’s talk now about what’s really awesome - the chocolate! When Jardine was growing up, she visited her mother’s hometown in Paris, where she would marvel at the delectable assortment of sweets at Fauchon. Later, while working for Macy’s, her ex- tensive travelling exposed her to a vast variety of cultures, flavours, and experiences. This love of travelling and chocolate-making is what Jardine uses as the foundation for all of her chocolate creations - blending both worlds to form stories to take her customers on a taste-adventure! Let’s begin our journey with her signature truffles. Shaped into flawless geometric cubes, each bon- bon is created by hand with a thin, delicate shell of perfectly tempered chocolate to fill a precise amount of luscious ganache. “Chocolate should melt in your mouth! Not your hand,” Jardine explains, as each piece should be the ideal ratio of cream to chocolate so the inner ganache will never solidify. This balance, there- fore, leaves the exterior with a satisfying crunch (you know that incredible feeling when you bite and the shell breaks) and a gooey uniquely fla- voured centre oozes out. Achieving this reci- pe though, takes a serious amount of skill and knowledge, however, and this is where this self- taught chocolatier draws from her travels and fashion background to create her signature treats. “The ingredients utilised are fresh with natural health benefits to offer a dessert that indulges and heals. The styling embodies a modern elegance with each confection made to harmonise a grace- ful release of flavour and texture, wrapped in modern, yet sophisticated, packaging.
